Chick-Brie + Cranberry Toastie

Brie + cranberry is a Christmas combo DELIGHT. The nuttiness of the chickpeas cuts through the sweet + saltyness, paired with a sage mayo to add to the festivity.
Ingredients

1 tbsp olive oil

A small bunch of sage (roughly 10 leaves)

½ jar of Bold Bean Co Queen Chickpeas, drained

1 heaped tbsp of mayonnaise

4 slices of bread
-
100 g brie cheese, roughly sliced

2 heaped tsp of cranberry sauce

A small handful of green leaves, such as spinach or ice berg lettuce (optional)
Directions
Heat the olive oil in a pan over a medium heat and fry the sage leaves for roughly 30 seconds until crispy, flipping half way through. Remove from the heat and set aside, reserving this pan and it’s oils for later.
Add the chickpeas to a mixing bowl with the mayo and some cracked black pepper and mix well to combine (season with salt if using canned beans). Mash some of the chickpeas with the back of forth for some texture. Crush in the crispy sage and mix well.
Toast your bread. Start with a layer of spinach or lettuce, if using. Spoon the chickpeas onto one side of the toast then layer over the slices of brie. Dollop over the cranberry sauce then top with the other slice of toast.
Heat the pan you cooked the sage over a medium heat. Pop the toastie into the pan and lightly press down with a spatula. Toast each side for roughly 2 minutes until the brie starts to ooze out.
Slice the toastie in half and tuck in.
