Spiced Haricot Beans

They're versatile, extremely nutritious and with particularly when using good quality beans, they really don't need much else doing to them, just like these simple spiced haricot beans.
Ingredients
1 tablespoon of olive oil
4 sprigs of coriander (reserving the leaves)
1 heaped tablespoon of korma curry paste
1 level teaspoon of ground turmeric
1 x 400g tin of haricot beans, juice and all
160g of frozen leaf spinach
A splash red wine vinegar
A handful of fresh coriander, for garnish
Serving SuggestionsNaan, warm flatbreads or bread of choice

Mango chutney

Directions
Put a non-stick frying pan on a medium heat with 1 tablespoon of olive oil, finely chop the stalks from 4 sprigs of coriander (reserving the leaves) and add with 1 heaped tablespoon of korma curry paste and 1 level teaspoon of ground turmeric.
Fry for 1 minute, pour in 1 x 400g tin of haricot beans, juice and all, add 160g of frozen leaf spinach, bring to the boil, then simmer for 5 minutes, or until the spinach has defrosted, stirring regularly and adding a splash of water, if needed.
Season to perfection with a splash of red wine vinegar, sea salt and black pepper. Add the coriander leaves.
Serve into bowls with a dollop of yogurt and mango chutney, if you like, and mop up with bread of choice. Or pair with rice and top with grilled halloumi or paneer for something extra hearty.
