Harira Soup

Ingredients: 2 tbsp ghee, coconut oil or olive oil; 1 v large onion or leek, finely chopped; 2 celery sticks, finely chopped; 3 big carrots, bite size chopped; 4 garlic cloves, finely chopped; 1 tsp fresh ginger, finely chopped; 1.5 tsp ground cumin; 1.5 tsp smoked paprika; 3/4 tsp ground turmeric; 1/2 tsp ground cinnamon; 1 tbsp tomato puree; 300g dried green lentils, rinsed well; 800ml-1 litre veg stock or chicken broth; 400g tin chopped tomatoes; ½ x 700g jar Bold Bean Co. Queen Butter Beans, rinsed or other beans; 1 lemon (unwaxed so we can use the zest); Sea salt and black pepper, to taste; Full fat yoghurt; Lemon zest; Aleppo or urfa chilli flakes or regular chilli; Big handful chopped parsley or coriander

Cosy easy mid week soup. Perfect for a freezer fill. Inspired by *harira*, the amazing Moroccan soup.

Ingredients
