800g mix of root veg like carrots, parsnips with sweet potatoes
2 fat garlic cloves, roughly chopped
Thumb of fresh ginger, finely grated or chopped
1 tbsp curry powder
1.5 litres veg stock or broth
For the Chickpeas1 x 570g Queen or Organic Chickpeas, drained, rinsed and patted dry
3 tbsp coconut or olive oil
1 tbsp curry powder
To serveYoghurt or coconut yoghurt
