Easy Chickpea-sy Broth

"On a recent trip to Athens, I ate at Deporto, a no-frills, no-menu restaurant where you're seated and served a selection of dishes without ordering. Among them was this chickpea dish: a simple broth, melt-in-the-mouth jumbo chickpeas, lots of black pepper, and plenty of olive oil. It was heavenly! When I got home, I had to recreate it—and I’m happy to say this version is pretty much spot on. I’ve added my tahini recipe on here too, not necessary but delicious if you want to finish with a dollop"
Ingredients
2 medium onions, peeled and sliced into eighths
6 large garlic cloves, grated
2 x 570g jars Queen chickpeas - with their bean stock
Small bunch fresh bay leaves, optional
120ml Greek olive oil, plus more for drizzling - this one works particularly well
Juice of 2–3 lemons
50g parsley, picked
Bread, to serve (optional)
Whipped Tahini150g tahini
20g Greek olive oil
125g water
1 lemon / 30g lemon juice
½ tsp salt

Directions
Add the onions, garlic, chickpeas with their liquid, 400ml water, bay leaves (if using) and a good pinch of salt to a medium-large pan with a lid. Cover, bring to a boil, then reduce to a simmer.
Stir in the olive oil and cook for about 10 minutes, or until the onions are soft and mellow. If you’re using canned chickpeas, these will need a lot longer to cook to fully soften, about 30-40 minutes.
While that’s bubbling, you can make the whipped tahini - this is optional, but it adds a nice creaminess to the dish.
Add the parsley, lemon juice and lots of cracked black pepper. Taste and adjust seasoning as needed.
Divide the stew into bowls and finish with a dollop of the whipped tahini (if using) and serve with fresh bread to mop it all up.
Blend all the ingredients in a blender until fluffy and smooth. It’s great on everything!
