Salade van rode bonen, aardbeien en feta
When strawberries are at their peak, this is a great way to use them. Fresh, light, but still satisfying from those fibre-rich red beans and tangy feta. DELICIOUS.

Ingrediënten
400g Strawberries, quartered
200g Tomatoes (cherry or plum work well), quartered
1 jar Bold Bean Co Queen Red Beans, drained and rinsed
1 x Red chilli, sliced
2 tbsp Sherry vinegar
150g Feta
Extra Virgin Olive oil
Basil leaves, for garnish

Let strawberries and tomatoes sit with a good glug of olive oil and sea salt for 10-15 minutes.
Mix in the rinsed beans, red chilli and a few basil leaves. Mash up a few of the beans, that way they will soak up the dressing.
Make the dressing. Add 3 tbsp of olive oil, the sherry vinegar, and a good grind of black pepper to a bowl and mix well.
Pour over the strawberry, tomato + bean mix. Top with crumbled feta and a few basil leaves for garnish.
