Salade van zwarte bonen, bramen en geitenkaas

A combination of black beans + blackberries make this salad FULL of Polyphenols - a type of antioxidant that feeds our good gut bacteria, also helping to support both our heart + brain health. Creamy goats cheese cuts through both the tartness + sweetness.

Ingrediënten

25g pumpkin seeds, toasted

2 tbsp olive oil

2 tsp honey

Splash of light vinegar, such as white wine or apple cider

30g rocket

A small bunch (roughly 10g) fresh mint, leaves roughly chopped

1/2 jar of Queen Black Beans, drained and rinsed

200g blackberries

125g soft goats cheese

Lightly toast the pumpkin seeds in a dry pan over a medium heat until they start to pop.

Add the olive oil, honey and vinegar to a large mixing bowl (we’ll use this to form the salad) and mix well to combine to form a dressing.

Add the rocket, mint, blackberries, black beans and pumpkin seeds to the bowl and toss well in the dressing. Check for seasoning, if you think it needs a bit of sharpness (depending on the taste of your blackberries!) add a splash more vinegar to taste.

Serve the salads onto plates and crumble over the goats cheese, keeping it in fairly big, creamy chunks. Finish with some cracked black pepper and an extra drizzle of extra virgin olive oil, if you like.
