Creamy Tomato + Mascarpone Butter Beans

Like the pasta, but without the pasta - with big, UNCTUOUS creamy Queen beans instead. Higher in protein, fibre, and all-round better for you, without compromising on that comforting indulgence you’d expect from the OG pasta dish. This is a one-pan weeknight dinner that’s moreish and comforting. Peas add a nice pop of sweetness + a squeeze of lemon juice at the end goes a long way. You could fry off some bacon or pancetta before the tomatoes go in too, if you fancy a saltier, meaty kick.

Ingredients

1 jar Queen Butter Beans or Queen Chickpeas - with their bean stock

150g pancetta or smoked bacon, cubed OR sundried tomatoes, finely chopped (for a veggie version)

2 tbsp olive oil

2 garlic cloves, thinly sliced

½ tsp chilli flakes (or to taste)

1 x 400g can good-quality whole plum tomatoes

200g frozen peas - ideally petit pois, if you can get them

100g spinach (optional)

125g mascarpone

30-40g parmesan, finely grated, plus extra to serve

15g basil leaves

To serve

Grated Parmesan

Warm crusty bread

Green veggies like tenderstem broccoli or kale

Lemon wedges

If you’re using pancetta, h one tablespoon of oil in a saucepan over a medium-high heat and fry the pancetta until crispy - about 4-5 minutes. Add the garlic, chilli flakes and chopped sundried tomatoes here, if using those instead of pancetta, cook for 1 minute until the garlic is fragrant but not coloured, stirring regularly.

Pour in the tinned tomatoes with a good pinch of salt, breaking them down with a wooden spoon, followed by the butter beans, peas and spinach, if using. Bring to a simmer.

After about 6-7 minutes of bubbling, reduce the heat to low stir through the mascarpone (you don’t want to add it too soon, or the mascarpone will split). Lastly, stir through the parmesan and basil leaves and season to taste.

Divide into bowls and shower with gratings of parmesan, some cracked black pepper and a squeeze of lemon juice. We like to eat this with some warm crusty bread and steamed tenderstem broccoli.
