One-Pot Chicken, Vegetable + Cannellini Bean Bake (Sebzeli Tavuklu Türlü)

Sebzeli Tavuklu Türlü is a comforting Turkish classic, celebrating tender chicken cooked slowly with a medley of Mediterranean veg. This dish is all about simple ingredients coming together to create something deeply flavourful - soft, melt-in-the-mouth veg, creamy white beans, rich juices + warming spices.
It’s the kind of one-pot meal that feels both nourishing and generous, perfect for sharing with family or serving up for an easy, satisfying dinner. Even better, it tastes richer the next day, making it ideal for cooking ahead.
Ingredients
1 jar Queen White Beans - with their bean stock
600g skinless boneless chicken breast, cut into 4×4 cm chunks
3 tbsp full fat Turkish or Greek yoghurt
4 garlic cloves, finely chopped
2 tbsp olive oil
2 tbsp double concentrated tomato purée
1 tbsp biber salçası (red pepper paste)
For the rest
1 large onion, roughly chopped
2 medium courgettes, about 500g, cut into 1cm slices
3 Romano or 2 red bell peppers, deseeded and cut into 2cm chunks
2 tbsp olive oil
400g can chopped tomatoes
1½ tsp ground cumin
1 tsp pul biber
300ml water
Salt and freshly ground black pepper, to taste

Directions
Place the chicken pieces in a large bowl. Add the yoghurt, garlic, olive oil, tomato purée and biber salçası, season with salt and black pepper and stir so the chicken is well coated. Cover and leave in the refrigerator to marinate for 15–20 minutes, or for a few hours if you have the time.
Preheat the oven to 180°C fan/200°C (400°F). Place the onion, courgettes and peppers in a large roasting tin (tray), one that is 35×40×5cm, and drizzle over the olive oil. Add the chicken and any bits of marinade, chopped tomatoes, cumin and pul biber and mix well. Add 300ml of the water, swirling a little in the chopped tomato can to capture any remaining bits of tomato. Season with salt and pepper, give everything a final good mix, then bake in the oven for 40 minutes.
Remove the tin from the oven, stir in the beans with their liquid and bake for a further 15–20 minutes until the vegetables and chicken have begun to char around the edges.
Serve hot with Çoban Salatası, if you wish.
