Masala Baked Beans with Melted Cheddar + Green Chillis

Saucy, subtly spiced masala baked beans piled onto golden, crispy sourdough and topped with a generous melt of cheddar for the ultimate quick comfort fix. We love this finish with sliced green chillis for an extra kick, but pink pickled red onions would work a treat for something sweeter!

Feeds: 2
Takes: 10 minutes

Ingredients

1 jar Masala Baked Beans

2 slices of sourdough bread (or bread of choice)

Knob of butter or olive oil

100g cheddar cheese, grated (or plant-based alternative)

1 green chilli, thinly sliced

Fresh coriander leaves, to finish

Pink pickled red onions (optional)

Directions

1

Heat a little butter or olive oil in a large frying pan over medium-low heat.

2

Place both slices of bread in the pan and spoon the spoon baked beans on top of each slice.

3

Sprinkle generously with grated cheese. Cover the pan with a lid and cook for 3–5 minutes, until the cheese is fully melted and the bottom of the bread is crisp and golden.

4

Remove each slice from the pan and onto a plate. Scatter with thinly sliced green chilli and serve immediately.
