Curried Caramelised Onion + Chickpea Smash Wrap

One batch, three ways to eat it: piled into a wrap, stacked in a sandwich, or scooped up in crispy lettuce cups. It's sweet, spiced and properly moreish, it's the kind of thing worth doubling so it's in the fridge and ready to go all week. Swap the yogurt / mayo for a plant-based alternative.

Ingredients

For the chickpeas:

1 jar Queen Chickpeas - drained

3 tbsp neutral oil, such as sunflower or rapeseed

1 onion, finely diced

2 garlic cloves, finely chopped

2 tsp mild curry powder

1 tsp ground turmeric

¼ tsp ground cinnamon

Pinch of chilli powder or flakes (optional)

2 tbsp raisins or dried cranberries

2 tbsp Greek yogurt or mayonnaise (or half / half) (or plant-based alternative)

2 tsp mango chutney

To build:

4 large wraps

Pickled red onions

Something crunchy - shredded cos lettuce or diced cucumber (optional)

Fresh coriander, roughly chopped (optional)

Heat three tablespoons of oil in a pan over medium-low heat. Add the onion and cook for 10-12 minutes until soft and sweet and starting to catch a little colour - don't rush this, it's where the flavour comes from.

Add the garlic and cook for another minute until fragrant.

Add the curry powder, turmeric and cinnamon and cook for another minute, stirring, until fragrant. Tip in the raisins and a splash of water to stop the spices catching, then let it all bubble down for a minute.

Add drained chickpeas with a good pinch of salt and mix well so that the chickpeas are fully coated in the spices. Simmer for 2-3 minutes.

Tip the chickpeas into a large bowl and mash a few of them using the back of a fork for a creamier texture. Add the yogurt / mayo, mango chutney, pickled red onions, any crunchy element like diced cucumber or lettuce and coriander, if using, and mix well to combine. Season to taste. It should be rich and well coated, not dry.

Pile the chickpea mixture onto each wrap. Roll up tightly, pressing firmly as you go so it holds together and everything is nice and compact. Slice down the middle and tuck in.
