Green Goddess Black Bean Bowl
A Green Goddess Salad with an Asian twist. Fresh, zingy, protein + plant-packed, this salad comes together in under 20 minutes, making it a new lunch time staple that's going to leave you satisfied + nourished. Serve with a rice for a heartier affair.
Ingredients
4 tbsp greek yogurt (or dairy free yogurt)
1 tsp white miso
1 tbsp soy sauce
2 tbsp toasted sesame oil
1 tbsp honey or maple syrup
20g coriander
½ avocado (we’ll use the other half in the salad)
The juice of 1 lime
For The Salad1 tbsp sesame oil
1 little gem lettuce, quartered
1 pak choi, end removed
1 cucumber, shaved into long ribbons
½ avocado, sliced into chunks
1 jar of Queen Black Beans, drained
To serveSesame seeds
Coriander
Tortilla chips (optional)

Directions
Blend all the dressing ingredients together until you reach a bright green, smooth consistency. Taste and add a pinch of salt if needed. If the dressing looks too thick, add more lime juice – it should be scoopable. Set aside in the fridge.
Heat 1 tbsp sesame oil in a pan over a medium-high heat. Add the lettuce and pak choi to the pan and fry for 4-5 minutes, rotating halfway through, until it’s nicely charred all over.
Assemble the salad in bowls. Layer the green dressing at the bottom, top with charred veg, peeled cucumber, avocado chunks and scatter over the beans. Garnish with a few more sesame seeds and a few coriander leaves.
