Tuna + Butter Bean Chopped Salad

CHOP CHOP get putting beans in your chopped salads! This one is SO quick, easy BUT nutritious and so delicious. We’ve based this one off an Italian classic - tonno e fagioli (tuna + beans to you and us). Capers give it a bit of zing + celery for the crunch. big, fat CREAMY QUEEN BUTTER BEANS give it the lusciousness that all salads crave.

Ingredients

2 celery sticks, quartered

1 red onion, roughly sliced

2 x tins good quality tuna in olive oil

3 tbsp capers

1 jar Bold Bean Co Queen Butter Beans, drained

For the dressing

3 tbsp olive oil (use what you can from the tins of tuna)

15g parsley, roughly chopped

½ lemon juice

Directions

Put the onion, celery, capers and tuna in the centre of a large chopping board and roughly chop everything into even-sized pieces.

Mix all of the dressing ingredients in a small bowl until combined.

Tip the chopped mixture into a large mixing bowl followed by the drained beans. Pour in the dressing, season well with cracked black pepper and toss everything to combine (check for seasoning - keeping in mind the capers + beans will add salt)

Plate up and enjoy.
