The Ultimate Cheesy Baked Bean Toastie
This is no ordinary toastie. It’s a molten, golden blanket of cheese hugging the outside, with a rich tomato baked bean centre which OOZES out in all the right ways. The ideal comfort food made in minutes.
Ingredients
1 x 325g jar rich tomato baked beans (or any of our flavours!)
80g mature cheddar, coarsley grated
50g mozzarella,(or another good melter like Red Leicester or Gruyère) coarsely grated
4 slices bread of choice (sourdough, white bloomer or seeded works great)
Butter, for spreading

Directions
We’ll work in two batches - making one toastie at a time.
Mix the grated cheddar and mozzarella in a bowl. Heat a non-stick frying pan over a medium-low heat and sprinkle a generous layer of the cheese mix - about 20g - straight into the pan to cover the base of the pan - this is your “blanket”. Let it start to melt and sizzle.
Put 2 slices of bread on top of the cheese and cover with a lid. Cook for a couple of minutes until you see the cheese to start to ooze from underneath the bread and is crisp and golden. Remove the lid, then using a spatula, carefully flip the cheese-coated bread onto the other side, so the cheesy side is now on top - it should stay in tact, looking golden brown.
Spoon half a jar of the baked beans onto one half of the toastie, then using a spatula, carefully flip the other half so that it covers the baked beans - the toastie should break and a slice of bread should now be on top. Spread this slice of bread with butter, then flip until that side is golden brown. Flip again and butter the other side of the bread, then flip one final time to let the other side get golden brown too.
Slide the toastie off the pan onto a serving plate. Slice in half and dive in with a mega cheese pull. Repeat with the remaining cheese, bread and baked beans to make a second toastie.
