Rich Tomato Baked Beans, with Mint, Oregano + Honey-Glazed Halloumi
Salty-sweet halloumi meets our Rich, Tomatoey Baked Beans. It's the ideal brunch when you want something that little bit more fancy.
Ingredients
1 jar Rich Tomato Baked Beans
1 tbsp olive oil
200g block of halloumi, sliced into 2cm thick cubes
1 tsp dried mint
1 tsp dried oregano
A pinch of chilli flakes (optional)
1 tbsp honey
2 slices of sourdough bread, or bread of choice
A handful of fresh mint leaves (optional)

Directions
Heat the baked beans in a pan over a medium heat.
Heat one tablespoon of oil in a pan over a medium heat. Add the halloumi and cook until evenly golden on all sides, turning occasionally. Once golden, turn the heat to low and sprinkle with mint, oregano, chilli flakes if using), then drizzle with honey and cook for another minute until glazed and smelling fragrant.
Toast the bread until crisp and golden - either in a toaster for a quick, light finish, or in a pan with a drizzle of olive oil, frying both sides until crisp and golden brown.
Spoon the baked beans onto the toast, top with the halloumi slices and finish with some fresh mint, if you like.
