La Scala Salad
"I loved the simplicity of this salad, which is typically made with salami and Parmesan but I thought it was crying out for a little. I've opted for Manchego and chorizo instead , giving this some Spanish flair- it tastes like all the best bits of tapas, and is totally heavenly" - Saskia.

Ingredients
1 jar of Queen Chickpeas, drained + rinsed
50g Manchego cheese, finely grated, plus extra (optional) to serve
1½ tablespoons Dijon mustard
40ml red wine vinegar
100ml extra virgin olive oil
1 Romaine lettuce, shredded
80g chorizo slices, shredded
225g mozzarella bocconcini cheese, torn if large
25g parsley, leaves picked
Directions
In the bottom of the salad bowl, combine the grated Manchego, mustard, vinegar and olive oil and mix until smooth.
Add the lettuce, chorizo, mozzarella, chickpeas and parsley leaves to the bowl, with salt and pepper to taste. Toss well to combine.
Sprinkle with extra grated Manchego, if you like, and tuck in.
