Kale, Pear + Carlin Pea Chopped Salad with Maple Butter Walnuts
We've all heard of a chopped salad but have you heard of a CARLN PEA?! These British-grown peas are similar to a chickpea, so work wonders in a salad. They have a nutty taste, similar to a chestnut, with a satisfying bite.
Ingredients
70 g kale
2 heads of chicory, halfed
3 ripe pears, quartered
1 tbsp butter
1 tbsp maple syrup or honey
70 g walnuts
1 jar of Queen Carlin Peas, drained
Parmesan, to serve (optional)
For the dressingThe juice of 1 large orange
1 tbsp red wine vinegar
2-3 tbsp olive oil

Directions
Melt the butter in a pan over a medium heat and once melted, add the maple syrup. Tip the walnuts into the pan and give the pan a shake to coat the nuts in the buttery mixture. Toast for 2-3 minutes (it should start to smell sweet + buttery!)
Put the kale, chicory and pear onto a chopping board and roughly chop into bite sized chunks. Add the toasted walnuts and chop some more. Tip everything into a mixing bowl followed by the drained carlin peas and toss to combine.
Mix all of the dressing ingredients together in a small bowl with a pinch of flaky sea salt and pour this into the salad mixture. Toss well to coat.
Finish with a few shavings of parmesan, if you fancy.
