Coronation Carlin Peas
Better than coronation chicken? THESE are CORONATION CARLIN PEAS. Nutty, with a slightly mushy-pea like taste, it's a perfect blend with a curried, coronation-style dressing. Serve in crunchy lettuce cups or as a filler for a hearty sandwich.
Ingredients
45g flaked almonds
4 heaped tbsp Greek yogurt (or plant-based alternative)
2-3 tsp mild curry powder, to taste
1 tsp ground turmeric
½ tsp ground cinnamon
2 tbsp mango chutney
1 x 700g jar of Queen Carlin Peas, drained and rinsed
½ cucumber, sliced into bite-sized chunks
2 tbsp sultanas
A large handful of coriander (roughly 15g), roughly chopped
Serving Suggestions2 baby gem lettuces, leaves separated to use as “cups”
Bread of choice, to serve as a sandwich

Directions
Toast the almonds in a dry pan over a low-medium heat until lightly browned, roughly 2 minutes.
Add the dressing ingredients to a mixing bowl with a pinch of salt and mix well to combine. Then, tip in the carlin peas, cucumber, sultanas, coriander leaves and almonds and toss well to combine.
Tip the salad onto a large serving platter - serve as a salad straight from the plate, scoop the mixture into lettuce cups or as a sandwich filler.
