Chickpea Antipasti Salad

This dish showcases the power of good quality jarred ingredients. No cooking involved, minimal prep, everything just gets bunged into one mixing bowl for all the flavours to mellow together. This feeds 2 as a hearty lunch, or 3-4 as part of a BBQ spread or as more of an appetiser when entertaining guests. BEST ENJOYED IN THE SUNSHINE!


Don't be tempted to rinse our beans! They are seasoned throughout the cooking process, so a lot of the flavour is held in that luscious bean stock.

Ingredients

1 jar Queen Chickpeas, drained

250g jarred red peppers, thinly sliced

2 tbsp capers

150g jarred artichoke hearts in oil, halved

15g fresh dill, finely chopped

15g fresh parsley, roughly chopped

The juice of ½ lemon

Extra virgin olive oil, to serve

Directions

Tumble all ingredients into a large mixing bowl and toss well to combine. Plate up onto a serving platter and finish with a drizzle of olive oil. And that’s it!
