Chickpea Antipasti Salad

Ingredients

1 jar Queen Chickpeas, drained

250g jarred red peppers, thinly sliced

2 tbsp capers
-
150g jarred artichoke hearts in oil, halved

15g fresh dill, finely chopped

15g fresh parsley, roughly chopped

The juice of ½ lemon
-
Extra virgin olive oil, to serve
Directions
Tumble all ingredients into a large mixing bowl and toss well to combine. Plate up onto a serving platter and finish with a drizzle of olive oil. And that’s it!
