Butter Bean + Courgette Ribbon Salad with Basil, Toasted Pine Nuts + Shaved Parmesan

Ingredients
- 1 x 660g jar @boldbeanco Queen Butter Beans
- 2 green courgettes
- 1 yellow courgette
- 50g parmesan cheese
- 50g of pine nuts, toasted
- A bunch of fresh basil
- A bunch of fresh mint
- 1 pack of rocket
- 1 lemon
- Olive oil
- Sea salt @cornishsea_salt
- Black pepper
Directions
Trim the ends off the courgettes. Using a flat vegetable peeler, peel the courgettes lengthways into ribbons. Continue to peel until you reach the core of the courgettes.
Place the courgette ribbons in a colander over a bowl, season with salt and allow to stand to extract the excess water.
Meanwhile, roughly chop the mint. Drain but don’t rinse the butter beans.
Add the courgettes to large serving bowl or platter and grate over the zest of 1 lemon. Add the butter beans, tear in the fresh basil, add the fresh mint, rocket leaves, black pepper and drizzle over a good glug of quality olive oil. Toss everything together.
5.Finish by sprinkling over the toasted pine nuts shave over some parmesan cheese
