Bob Mortimer's Beans on Toast with Slow Roasted Tomatoes + Feta Cheese
It's official. Bob Mortimer is a certified BEAN CHAMP.
His signature serve - slow-roasted tomatoes, garlic, herbs, "sumptuous, fat, juicy QUEEN BUTTER BEANS" (his words) + bit of feta cheese - was revealed in the latest episode of Real Gone Fishing. Watch a snippet here.
We've written out a version for all you bean champs to enjoy. We've tried it. It's ace. BOB, THANK YOU, YOU LEGEND.
Ingredients
1 jar Queen Butter Beans - with their bean stock
250g vine cherry tomatoes
2-3 garlic cloves, whole, skin-on
3-4 sprigs of fresh rosemary (or thyme, oregano, or a mixture!)
Olive oil2–4 slices of bread of choice (Bob uses brown bread - sourdough will also work well)
Feta cheese, to serveShop The Recipe
Directions
Preheat the oven to 180°C (fan).
Put the vine tomatoes into a roasting dish with the garlic and herbs - you want them nestled fairly close together, not too spread out, so they gently stew and caramelise in their own juices. Drizzle generously with olive oil, season well, and roast for about 25-30 minutes, until the tomatoes have almost collapsed and turned jammy.
Pour in the butter beans and their stock (the stock will give it that glossy, sauciness). Stir gently, then return the dish to the oven for another 6-7 minutes or so, until the beans are hot and coated in the tomato juices.
Toast the sourdough.
Squeeze the soft garlic from its skins and mash it lightly into the toast. Then pile on the beans, tomatoes and all the juices. Crumble over some feta and a few cracks of black pepper.
