Speedy Sardine + Butter Bean Salad
Fast, fresh, and seriously satisfying. This is what we call a "dense" salad - a high protein, high fibre bowl FULL filling, nutrient-rich ingredients to keep you satisfied. Think creamy butter beans, omega-rich sardines, crunchy veg and punchy capers, all tossed in a zingy lemon-Dijon dressing.
Ingrediënten
1 jar Queen Butter Beans or Queen White Beans - drained
2 celery sticks, finely chopped
1 red onion, finely chopped
3 tbsp capers
A small bunch (about 10g), fresh parsley, finely chopped
3 x 120g tins sardine in olive oil or brine
For the dressing
2 tbsp olive oil
Juice of 1 lemon
1-1.5 tsp dijon mustard
¼ tsp honey (optional)
Routebeschrijving
To a large mixing bowl, add all the ingredients for the dressing with a pinch of salt and black pepper and mix well to combine.
Add all the ingredients to the same bowl, lightly flaking in the sardines and toss well to combine. You want everything in bite sized pieces.
Serve onto plates and finish with an extra drizzle of olive oil and a cracked black pepper.
