Queen Chickpea BLT Salad
This salad takes all the components of a good BLT and turns it into one heck of a salad. Tomatoey sweetness and crunchy garlic bread croutons contrast SO well with the bacon + tangy soured cream dressing. What makes it better? QUEEN CHICKPEAS, for heartiness, extra fibre + protein for a seriously satisfying salad.
Ingrediënten
1 jar Queen Chickpeas - drained
3 tbsp thick Greek yoghurt or mayonnaise (or half and half)
1 tbsp wholegrain or dijon mustard
3-4 rashers of crispy bacon (optional)
40g parmesan, grated
150g cherry tomatoes, quartered
Juice of ½ lemon
Optional:
shredded cooked chicken
To serve
Pitta, wraps, or crisp-breads
Spinach, cos or baby gem lettuce leaves

In a large bowl, combine the yoghurt, mustard, chickpeas, and lemon juice with a pinch of salt and black pepper. Snap the bacon into the bowl in bite-sized pieces (if using) then add the parmesan and diced veg. Mix until fully combined. Taste and adjust seasoning or yoghurt if needed.
Store in an airtight container in the fridge for up to 3 days. Layer onto lettuce leaves or salad leaves, or stuff into a pitta, wrap, or cracker when ready to eat.
