Sweet + Smoky Tomato Beans on Toast with Chipotle Sauerkraut
This epic recipe was created thanks to The Cultured Collective - the BEYOND epic fermentary. They gave some of our beans and their krauts to the talented Izy Hossak who created this recipe.
Ingredients
1 tbsp of olive oil
1 onion, finely diced
2 tbsp of tomato purée
2 tbsp of soy sauce
200g of passata
1 tbsp of sugar or balsamic vinegar
1 tsp dried mixed herbs
1 tsp smoked paprika
4 garlic cloves, crushed
4 slices of thick-cut sourdough, or gf option
1 jar of Organic White Beans, with their bean stock
Toppings:50g cheddar cheese, grated - or vegan alternative

Directions
Heat the oil in a saucepan and add the onion and garlic. Cook over a medium heat for 5 minutes until soft and translucent.
Add the tomato purée, smoked paprika, mixed herbs, coconut sugar and soy sauce and cook for a couple more minutes.
Add passata, stir thoroughly and simmer for at least 10 minutes and the sauce has thickened a little.
Add the beans and their stock and simmer for a further 5 minutes.
Season to taste.
Spoon onto warm toast, top with grated cheese and sauerkraut.
