Sweet + Smoky Tomato Beans on Toast with Chipotle Sauerkraut

Ingredients
1 tbsp of olive oil
1 onion, finely diced
2 tbsp of tomato purée
2 tbsp of soy sauce
200g of passata
1 tbsp of sugar or balsamic vinegar
1 tsp dried mixed herbs
1 tsp smoked paprika
4 garlic cloves, crushed
4 slices of thick-cut sourdough
1 x 700g jar of Bold Bean Co Organic White Beans (or 2 x 400g tins, such as haricot or cannellini)
50g cheddar cheese, grated

Directions
Heat the oil in a saucepan and add the onion and garlic. Cook over a medium heat for 5 minutes until soft and translucent.
Add the tomato purée, smoked paprika, mixed herbs, coconut sugar and soy sauce and cook for a couple more minutes.
Add passata, stir thoroughly and simmer for at least 10 minutes and the sauce has thickened a little.
Add the beans and simmer for a further 5 minutes.
Season to taste.
Spoon onto warm toast, top with grated cheese and sauerkraut.
