Red Bean, Stilton, Apple + Walnut Chopped Salad

Ingredients

100g stilton, or any other blue cheese

2 apples like a pink lady or gala, quartered

70g walnuts

1 tbsp runny honey

1 tsp wholegrain mustard

50g Rocket / salad leaves

1 jar Queen Red beans - drained

Olive oil, to serve

Directions

Put the apple wedges, stilton and walnuts onto a chopping board and roughly chop into bite-sized chunks.

Pour the chopped mixture into a mixing bowl followed by the rocket and drained beans. Add the honey and mustard and mix well to combine. Season to taste.

Tumble the salad onto a serving platter and finish with a drizzle of olive oil.
