Rich red beans, spicy nduja + oozy mozzarella. THIS is a recipe you'll want on repeat.
Ingredients

1 tablespoon olive oil

1 onion, finely chopped

2 garlic cloves, sliced

1 tablespoon tomato puree

1 x 400g tin chopped tomatoes

2 teaspoons oregano
-
1 x 700g jar Bold Bean Co Queen Red Beans (or 2 x 400g tins of red kidney beans), drained

50 g cavolo nero, de-stemmed and chopped into thirds
-
125 g mozzarella cheese, torn into small pieces
-
1 tablespoon n’duja paste

A handful of breadcrumbs, mixed with a splash of olive oil

A squeeze of hot honey, or regular honey with a pinch of chilli flakes

Wam ciabatta or sourdough, to serve
Directions
Heat the oil in a pan over a medium heat. Once hot, add the onions and cook for 7-8 minutes until softened, then add the garlic and tomato puree and fry off for a further 2-3 minutes.
Pour in the chopped tomatoes and add the oregano. Stir to combine and bubble away for 4-5 minutes to let the mixture thicken slightly. Then, stir in the red beans and cavalo nero and cook for 2-3 minutes until the cavalo nero has softened slightly.
Preheat the grill to medium-high heat.
Tip the mixture into a small, shallow roasting dish or oven-proof bowl. Top with the mozzarella pieces, nduja and breadcrumbs. Grill for 1-2 minutes or until the breadcrumbs are golden and the mozzarella is oozing. Drizzle over the hot honey.
Scoop the mixture from the pan onto your serving plate. Serve with some warm, crusty bread.
