
Coronation Chickpea Sandwich

Everyone loves a coronation chicken - nostalgic, VERY BRITISH + now, darn sustainable as you can sub the chicken for Queen Chickpeas. SORTED!

Ingredients

5 tbsp mayonnaise. (NOTE: If you have some greek yoghurt, you could substitute a few tbsp of the mayonnaise with this)

2 tsp mild curry powder, to taste

1 x 660g jar of Queen Chickpeas

½ tsp ground cinnamon

2 tbsp mango chutney
-
2 tbsp sultanas, or to taste

1 loaf of fresh, good quality bread

1/2 head of crunchy iceburg lettuce

handful of chopped coriander (optional)
Directions
Mix the mayo, curry powder, cinnamon, chutney and sultanas together and season with black pepper.
Drain the chickpeas of their stock, but do not rinse (you want to keep the bean stock flavour!). Reserve the bean stock.
Add the chickpeas to the sauce and stir to coat in the sauce. Stir in 2 tbsp bean stock to loosen if needed, then season.
To make the sandos
Slice your bread and on one slice put your coronation chickpea filling.
top with crunchy lettuce leaves (or cucumber) and another slice of bread.
Cut in halves and serve.
