Everyone loves a coronation chicken - nostalgic, VERY BRITISH + now, darn sustainable as you can sub the chicken for Queen Chickpeas. SORTED!

Ingredients
- 5 tbsp mayonnaise (use vegan if you like)
- 2-3 tsp mild curry powder, to taste
- ½ tsp ground cinnamon
- 2 tbsp mango chutney
- 2 tbsp sultanas or raisins
- A large handful, roughly 15 g, of chopped coriander
1 x 700 g jar of Bold Bean Co Queen Chickpeas (or 2 x 400g tins), drained
- 1 loaf of fresh, soft bread (Focaccia or soft white)
- 1/2 head of crunchy iceberg lettuce, torn into sandwich sized leaves
- 2 tbsp of bombay mix, roughly chopped
- 1 tbsp of flaked almonds, toasted
Crunchy Bits (optional)
Directions
- Mix the mayonnaise, curry powder, cinnamon, chutney and sultanas together and season with black pepper. Stir through the coriander. Season with black pepper and salt to taste.
- Drain the chickpeas of their stock, but do not rinse (you want to keep the bean stock flavour).
- Add the chickpeas to the sauce and stir to coat. Stir in 2 tablespoons of bean stock to loosen if needed, then season to taste.
To Assemble
- Slice your bread and on one slice put your coronation chickpea filling. If using focaccia, slice widthways. Top the mixture with the crunchy bits (optional), the lettuce leaves and another slice of bread. Cut in halves and serve.
