Butter Bean Gilda Canapes
The Spanish appetiser - Gildas - have been BEANIFIED, with super creamy butter beans to cut through the sharp tang of olives, anchovies + peppers. Ideal as a pre-dinner snack or festive appetisier for entertaining guests. Omit the anchovies and it's entirely plant-based.
Ingredients
20 large green pitted olives
20 guindilla peppers
100g sweet piquante peppers or long jarred peppers, sliced into bite-sized pieces
20 white anchovies
20 queen butter beans, drained (about 5 heaped spoonfuls)
20 small cocktail sticks
Extra Virgin Olive Oil, for finishing

Directions
Thread the olive onto the cocktail stick and slide it to the bottom. Fold an anchovy in half and thread that on too to meet the olive, followed by a pepper, chilli and a butter bean. Repeat with the remaining skewers.
Arrange the skewers onto a plate or platter and drizzle with extra virgin olive oil.
