Speedy Spicy Tuna + Butter Bean Salad
A spicy, herby twist on the classic tuna mayo. Creamy Queen Butter Beans add bulk, heartiness and fibre, with thick Greek yoghurt for a cooler, lighter finish than the usual mayo job. Preppable protein, ready to stuff into pittas, pile onto crunchy leaves, or fill any salad bowl that needs an upgrade.
Serves 2 as a hearty salad, or 4 stuffed into wraps or lettuce cups.
Ingrediënten
1 jar Queen Butter Beans – drained
3 tbsp thick Greek yoghurt or mayonnaise (or half and half)
1 tbsp fresh dill, finely chopped
1 tbsp fresh basil, roughly chopped
2 tbsp jalapeños, finely chopped
2 x tins tuna in water or brine – drained (240g)
2 spring onions, roughly sliced
2 vine tomatoes, deseeded and diced
2 tsp hot sauce, tabasco or sriracha
To serve
Pitta, wraps or crisp-breads
Cos or baby gem lettuce leaves

In a large bowl, combine the yogurt, herbs, tuna, beans, spring onions, tomatoes, jalapenos with a splash of the brine, and a pinch of salt and black pepper and mix until fully combined.
Store in an airtight container in the fridge for up to 3 days. Layer onto cos lettuce leaves, or salad leaves or choose, or stuff into a pitta, wrap or cracker when ready to eat.
