Creamy Butter Bean Caesar-Style Salad

Everything you love about a caesar salad, with all the BRILLIANCE of creamy, tender butter beans. Not only do the beans add flavour and texture, but they’re seriously bumping up the fibre + protein which makes this salad way more satiating. The dressing uses greek yogurt for a slightly lighter twist on the original, but feel free to go half and half mayo to yogurt, if you prefer. Ideal for meal prepping for easy lunches throughout the week.

Ingrediënten

For the bean base

1 jar Queen Butter Beans - drained

1-2 tbsp of the Caesar-style dressing (below)

For the salad

100-120g cos or romaine lettuce, finely chopped or shredded

45g parmesan, finely grated

4 slices streaky bacon (optional)

1 tbsp olive oil

Half head of large broccoli, sliced into florets and halved widthways (optional)

Optional added protein:

Jammy egg, or shredded chicken

For the dressing

5 tbsp Greek yogurt (or mayo for richer dressing, or half and half)

1 tsp Dijon mustard

1 large garlic clove, finely grated

Juice of ½ lemon

1 tbsp olive oil

6 anchovies (optional, chopped if using)

Heat 1-2 tablespoons of olive oil in a large pan over medium heat. Add the broccoli with a pinch of salt and cook for 5–6 minutes until just tender and slightly charred, stirring occasionally. You could also do this in an air fryer or oven.

If using bacon, give the pan a wipe and place the bacon slices in the pan (cold) then turn heat to medium. Cook for 6–8 minutes, turning occasionally, until golden and crispy. Drain on kitchen paper.

Meanwhile, make the dressing. Add all the ingredients to a blender or food processor with a pinch of salt and lots of black pepper and blitz to a smooth, creamy and pourable consistency. Adjust seasoning to taste. Stir 1-2 tablespoons of the dressing through the drained beans.

To assemble, layer a portion of the lettuce in the base of the bowl. Add a serving of the butter beans, then roughly snap or slice the bacon into bite-sized pieces and add that to the bowl, if using. Followed by the charred broccoli, if using, and shower with grated parmesan. Drizzle over the dressing and finish. Finish with extra protein like boiled egg or leftover, shredded roast chicken. Serve immediately.
