Smokey Beans

Ingredients

Drizzle olive oil or butter

4 rashes streaky bacon

1 onion chopped

3 garlic, peeled + chopped

bunch of thyme
-
2 bay leaves
-
1 tbsp chopped fresh thyme
-
1 heaped tsp smoked paprika
-
½ jar chipotle paste
-
1 tsp cumin seeds
-
1 tbsp tomato paste
-
2 tins chopped tomato
-
1 tbsp maple syrup
-
1 x 660g jar of white beans (our Organic White Beans or our Queen Butter Beans)

4 eggs

Small bunch coriander
Directions
Heat a pan over a medium heat + add a little oil + the bacon. Once it has started to crisp add the onion, garlic, thyme + bay leaves, cook for 5 minutes till softened.
Add the smoked paprika, chipotle, cumin seeds, tomato paste, the chopped tomatoes, maple syrup + the white beans + mix together, simmer for about 10 minutes, taste + season.
With a spoon make 4 wells in the bean mixture + crack in the eggs, cooked till the eggs are cooked + sprinkle over the coriander. Serve with some warm bread
