White beans + spinach on toast with a fried egg + chilli peanut rayu

The creamy white beans, the kick + crunch of the chilli peanuts + the oozy fried egg: you’ve never tasted beans on toast quite like it.
Ingredients
- 1 x 660g jar of Bold Bean Co Organic White Beans
- 100g spinach
- 4 eggs
- 4 slices of bread of choice
- I x jar of White Mausu’s peanut rayu (roughly 2tsp per serving)
Directions
Drain and rinse the white beans and add them to a large saucepan over a medium-low heat. Gently warm them through for a couple of minutes, then add the spinach. Cook on a low heat until the spinach has wilted, stirring occasionally.
Meanwhile, heat a large frying pan with olive oil over medium heat. Crack the eggs into the pan and allow to cook until the white has set but the yolk still runny, about 3 minutes.
Toast your bread.
Plate up the toast, spoon over the spinach and white bean mix, followed by the fried egg.
- Spoon over a generous drizzle of the peanut rayu.
Recipe Note
A Peanut rayu alternative: (we realise not everyone will have this, but we HIGHLY recommend this nutty jar of deliciousness)
2tbsp sesame oil or olive oil
2tsp chilli flakes
2tsp harissa paste
1tbsp peanut butter
2tbsp soy sauce or tarmari
A handful of crushed peanuts
1tbsp Sesame seeds
