Tahini & Black Lime Beans on Toast

Ingredients

Shallot
3 large minced cloves of garlic
1x660g Butter Beans
1x660g Butter Beans
1 tbsp Tahini
Pinch of Black Lime Powder
Zaátar
Corriander Leaves, chopped
Soft boiled egg
spring onion, chopped
Chilli Sauce
Sea Salt

Directions

Finely chop a shallot and 3 large minced cloves of garlic - sweat them in a good glug of olive oil.
Add a jar of good quality butter beans - bean juice, and all!
Simmer for 10 mins then stir through a tbsp of tahini, pinch of black lime powder, Za’atar to your taste (I used Lebanese Za’atar here), and chopped coriander leaves.
Serve on top of toast with a soft boiled egg, chopped spring onion, some chilli sauce of your choice (this is a homemade one,) and a sprinkling of sea salt.
