Queen Butter Beans + Pesto
Butter Beans + Kale Pesto
100g kale, washed
80g toasted nuts or seeds (I used almonds)
120g extra virgin olive oil
2 cloves garlic
1/2 Jar of 660g Queen Butter Beans or 1 tin of ordinary tinned butter beans
Blitz the kale, toasted nuts, Parmesan, olive oil, juice + zest of half a lemon in a food processor until you reach the desired consistency, season to taste
Put the butter beans in a saucepan with their bean stock, add a few tablespoons of water + bring to a bubble.
Simmer until the beans become creamy + break down (about 8 mins). Add a little more water if necessary
Turn off the heat, stir in a big knob of cold butter, a squeeze of lemon juice, season to taste + serve with the pesto
