Butter Beans + Kale Pesto
Butter Beans + Kale Pesto

Ingredients
100g kale, washed
80g toasted nuts or seeds (such as pine nuts, walnuts, or Beth uses almonds!)
100g Parmesan, grated
½ 700g jar of Bold Bean Co Queen Butter Beans (or 1 x 400g tin)
120g extra virgin olive oil
2 cloves garlic
1 lemon
Knob butter
Directions
Blitz the kale, toasted nuts, Parmesan, olive oil, juice and zest of half a lemon in a food processor until you reach the desired consistency, season to taste
Put the butter beans in a saucepan with their bean stock and bring to a bubble. Simmer until the beans become creamy and break down slightly (about 8 mins). Add a splash of water to loosen, if necessary.
Turn off the heat, stir in a big knob of cold butter, a squeeze of lemon juice, season to taste and serve with the pesto
