Orecchiette + Queen Chickpeas with Crispy Fried Rosemary Onions
1/2 jar Queen Chickpeas
60ml Olive Oil
1 Shallot, finely diced
4 cloves of garlic, crushed
1 tsp Dried Chilli Flakes
2 tsp Fresh Rosemary, finely chopped
2 tablespoons or to taste
Gently heat 60ml Olive Oil
Add a finely diced shallot and add the Queen chickpeas then allow to cook for 5 minutes.
Remove from heat and add 4 minced cloves of Garlic, a teaspoon of dried chilli flakes and 2 teaspoons of finely chopped fresh rosemary.
Cook orecchiette for 3-5 minutes then add to the chickpea pan with 1/4 cup of pasta water and heat for about a minute more with a splash more pasta water if needed to bring it all together.
Finish off with crispy onions.
