Marinated Tomatoes, Garlicky Butter Beans + Grilled Halloumi

Ingredients

600g mixed tomatoes, roughly chopped

A pinch of sugar

Olive oil

1 tbsp pomegranate molasses

2 tsp red wine vinegar

1 shallot, minced

2 cloves of garlic, sliced

A pinch of coriander seeds, lightly ground with a pestle and mortar

A pinch of chilli flakes

Leaves from a few sprigs of thyme or a pinch of dried oregano

1 x 660g jar of Queen Butter Beans
-
A handful of torn basil or mint and nasturtium flowers, to garnish

2 x 225-250g blocks of halloumi, cut into thick slices
