Hearty Salads -
Grilled Courgettes, Roasted Chickpeas + a Tahini Dressing
Ingredients
2 courgettes, sliced 1cm thick on bias
1 x 700g jar of Bold Bean Co Organic Chickpeas (or 2 x 400g tins) drained
1 tablespoon tahini
1 tablespoon yoghurt
A handful of sundried tomatoes, roughly chopped
Herbs (mint, dill or parsley would be good)
Olive oil, salt and pepper
Directions
Toss the chickpeas with a little olive oil, salt and pepper, transfer to a baking sheet and roast at 180°C until golden
Toss the courgette with olive oil, s&p and grill over a high heat in a griddle pan on both sides until nicely coloured
For the dressing mix the tahini and yoghurt with a tablespoon of water and salt to taste
Assemble the courgettes and chickpeas on a plate, drizzle with the tahini dressing and top with sundried toms and fresh herbs
