Pan fry in a some neutral oil on a medium heat until golden on both sides, then transfer to a baking tray and place in the oven for 10-15 mins until tender. Season with salt.
Heat 2 tbsp of olive oil over a medium heat for a minute, throw in the sage leaves, and fry until they stop moving, the drain on kitchen roll.
Mix the beans with the oil from the sage, vinegar and season to taste. Crumble in half the sage leaves and stir in the radicchio.
Pile to beans into bowls, top with the pumpkin, crumbled goat’s cheese and remaining sage leaves.
