Cypriot Butter Bean Bruschetta + Roasted Tomatoes on Grilled Bread

Ingredients

400g ripe tomatoes, on the vine

1 tbsp olive oil

1 tsp honey

1/2 tsp salt

1/2 tsp fresh ground pepper

1 x 660g jar of Queen Butter Beans, drained

1 large red onion, thinly sliced

1 bunch of Italian flat leaf parsley, finely chopped

4 tbsp extra virgin olive oil + 2 tbsp to drizzle on bread

2 tbsp red wine vinegar

1 tsp salt
-
1 tsp fresh ground pepper

4 slices crusty sourdough
Directions
Preheat oven to 204°C. Line a small baking sheet with parchment paper.
Place tomatoes on the vine onto baking sheet. Drizzle with oil, honey and season with salt and pepper.
Roast in oven until soft, charred and released some of their juices. Remove and either turn the temperature up, or turn on the grill to char those toms!
Heat a grill pan over medium high heat. Brush each side of bread with olive oil. Grill each side until golden crisp.
In a medium bowl, add beans, onion and parsley. Toss with olive oil, red wine vinegar, salt and pepper.
Place toasted bread slices on platter. Top with butter bean mixture and roasted tomatoes.
