
Chicken + Butter Bean Soup
Ingredients

4 rashes bacon, sliced

1 onion, chopped

3 garlic cloves, sliced

1 small fennel, chopped
-
2 bay leaves
-
Stick rosemary, chopped

1 tsp chilli flakes
-
600ml chicken stock
-
1 glass white wine
-
Handful chard or spinach
-
Left over chicken
-
Juice 1 lemon

Chopped Herbs
-
1 x 660g jar of Queen Butter Beans
Directions
Place a pan over medium heat + drizzle a little olive oil, add the bacon + fry.
Add the onion, garlic, fennel, bay, rosemary + chilli flakes + saute for 5 minutes.
Add the stock + wine + cook for 10 minutes.
Add the chard, chicken, butter beans + lemon, season + stir in your chopped herbs (mix of either parsley, tarragon, basil or dill)
