Butter Bean + Green Yoghurt Lettuce Cups
Butter Beans in Green Yoghurt, served in lettuce "tacos"

"A selfish bean bowl or a share plate. Just dip and roll the frisée like a taco with all the beans inside. If it wasn’t for lockdown this would be served at a big table, in a big bowl where everyone can make their own, eat with their hands and talk about the future and the past. We would play records and drink procecco. @boldbeanco sent me some beans to try, it was really hard not to consume these plain as these are THAT GOOD! Showcasing the bean here. Wouldn’t dare to blend these beauties."
1 tbsp of Extra-Virgin Olive oil
100g of greek yogurt or creme fraiche
60g of mayo (1/3 cup)
30g of parsley, chopped
30g dill, chopped
1-2 small garlic cloves
1tsp lemon juice
1 jar of Queen Butter Beans
2 x Spring onions (Eve used wild leek but that's hard to find), finely chopped
1 head of large lettuce leaves
Green Yoghurt Sauce
For the beans
For the green yoghurt
Blend all then stir in additional tbsp of yogurt if too thin. Taste and adjust.
Drain the beans, poor the sauce on top with the spring onions. garnish with more herbs and pepper/ salt if needed.
Drizzle with extra virgin olive oil, wrap in lettuce and enjoy
