Butter Bean + Green Yoghurt Lettuce Cups

Eve: "A selfish bean bowl or a share plate. Just dip and roll the frisée like a taco with all the beans inside. I'd serve this at a big table, in a big bowl where everyone can make their own, eat with their hands and talk about the future and the past. We would play records and drink proscecco. @boldbeanco sent me some beans to try, it was really hard not to consume these plain as these are THAT GOOD! Showcasing the bean here. Wouldn’t dare to blend these beauties."

Ingredients
1 tbsp of Extra-Virgin Olive oil
100g of greek yogurt or creme fraiche
60g of mayo (1/3 cup)
30g of parsley, chopped
30g dill, chopped
1-2 small garlic cloves
3 anchovies
1tsp lemon juice

1 x 700g jar of Bold Bean Co Queen Butter Beans (or 2 x 400g tins), drained
2 x spring onions (Eve used wild leek but that's hard to find), finely chopped
1 head of large lettuce leaves
Green Yoghurt Sauce
For the beans
Directions
For the green yoghurt
Blend all of the yoghurt ingredients in a food processor or a blender, then stir in additional tbsp of yogurt if the mixture is looking too thin. Adjust to taste.
Add the beans to a mixing bowl and spoon the sauce on top. Toss in the spring onions and garnish with more herbs and pepper/ salt if needed.
Dollop a spoonful of the beans into a lettuce tacos and finish with a little drizzle of olive oil. Enjoy!
