Butter Bean Gratin with Chard + Polenta

Ingredients

1 white onion, sliced

1 x 660g jar of Queen Butter Beans

800g chard, chopped and washed

85g butter

400ml milk

2 tbsp flour

300g grated cheddar

2 tsp dried oregano
-
2 tbsp polenta or breadcrumbs
Directions
Boil or steam the greens for one minute + drain (to wilt the leaves)
In a medium/ large pan sweat the onions in the butter until soft3. Stir in the flour, and cook out for 3 minutes on a medium heat
Pour the milk into the same pan little by little, stirring as you go. Make sure the milk is incoropated before adding more
Stir in the grated cheese + herbs then turn off the heat
Mix together the sauce with the drained butter beans + steamed greens, add salt + pepper to taste
Transfer to baking tray, scatter polenta over the top + bake on a high heat until golden + warmed through
