Ingredients
1 tbsp olive oil
1 onion, finely chopped
1 red pepper, sliced into strips
2 garlic cloves, finely sliced
2 tsp smoked paprika
1 tsp ground cumin
1 tsp chilli flakes or cayenne pepper
1 tbsp tomato puree
2 x 400g tins of chopped tomatoes
1tsp sugar or maple syrup
1 x 700g jar of Bold Bean Co Queen Black Beans (or 2 x 400g tins), with half of their bean stock
150g Feta cheese
15 g fresh parsley or coriander, roughly chopped
Toasted tortillas or sourdough
Sliced avocado (optional)
Hot sauce (optional)

Heat the olive oil in a wide, deep frying pan over a medium heat and cook the onions for 5 minutes until starting to soften.
Stir in the peppers and fry for a further 5 minutes, stirring often. Add the garlic, paprika, cumin and chilli flakes and cook for a further 1-2 minutes, stirring often.
Stir through the tomato puree for 1 minute then add the chopped tomatoes and a pinch of salt and bring to a lively simmer for 5 minutes.
Add the sugar or maple syrup and the black beans with half of their liquid and bubble away for 7-8 minutes to allow the sauce to thicken slightly.
Reduce the heat to medium-low. Make 6 gaps in the sauce and crack an egg in each. Cover with a lid and simmer for 5-6 minutes or just so that the egg whites are set but the yolks still runny.
Crumble over the feta cheese and scatter over the herbs. Serve with toasted sourdough and sliced avocado, if you like.
