This salad will transport you to a tropical paradise. It's zesty, vibrant + oh-so satisfying thanks to our Queen Black Beans. It's an absolute cracker to whack out during the summer months.
Ingredients

1 large cucumber

1 x 700g jar of Bold Bean Co Queen Black Beans (or 2 x 400g tin of black beans), drained + rinsed

A good pinch of chilli flakes, or to taste

150g of mixed olives, larger ones halved

2 limes

A small bunch of fresh mint (roughly 10g), roughly chopped

2 blocks of halloumi (roughly 450g), cut into 1.5cm thick slices

2 tbsp olive oil, plus extra for drizzling

A small bunch of fresh basil (roughly 10g)

1 cantaloupe melon, peeled + sliced into wedges
Directions
Gently bash the cucumbers with a rolling pin until they break up into large pieces. Chop these up into chunky, bite-sized pieces.
Add the cucumber, black beans, chilli flakes, olives, chopped mint, the zest of 2 limes and the juice of 1 and 1 tablespoon of olive oil and toss everything to coat. If using tinned beans, you will need to add a good pinch of sea salt here. Set aside in the fridge.
Heat a non-stick pan or griddle pan to a medium heat. Brush the halloumi with oil and fry each side for 2-3 minutes until griddle marks show.
Arrange some of the melon slices onto a large serving platter and scatter over some of the dressed bean mixture. Repeat this process as though you’re layering the salad. Top with the golden halloumi and scatter over the basil leaves. Finish with an extra squeeze of lime.
