Baked Tomato Butter Beans with Cold Buratta + Pesto
"This was the real deal. Bold Bean Co butter beans replacing gnocchi, but not even replacing cause they’re just so good they should be used in their own right. Simmered in a delicious tomato sauce and topped with cold burrata and pesto"
1 x 660g jar of Queen Butter Beans
1 small red onion
2 cloves garlic
Fresh chilli or chilli flakes
1 tin of cherry tomatoes + a squeeze of honey or pinch of sugar
1 ball buratta
drizzle of balsamic vinegar + fresh basil
Simply fry the onions in some olive oil for 3-4 minutes. Then add the garlic and chilli and cook for a further 1-2 mins.
Add the tinned toms and bring to the boil. Season, add the balsamic and sugar, and then the beans (reserve the juice)
Bubble away and allow to reduce a little, this can be as long as 20 mins or as little as 2.
Plate up, tear the burrata over the beans and spoon over the pesto. Drizzle with some good olive oil if desired and even parmesan if the moment takes you.
