"This was the real deal. Bold Bean Co butter beans replacing gnocchi, but not even replacing cause they’re just so good they should be used in their own right. Simmered in a delicious tomato sauce and topped with cold burrata and pesto"
Pesto, to serve (we like this pesto recipe or any shop bought jar will do!)
Directions
Fry the onions in 2 tbsp olive oil over a medium heat for 7-8 minutes until softened. Then, add the garlic and chilli and cook for a further 1-2 mins.
Add the tinned toms and bring to the boil. Season, add the balsamic and sugar followed by the beans and all of their liquid.
Bubble away and allow to reduce a little, roughly 6-7 minutes, stirring often.
Serve the beans into bowls. Tear over the burrata and a good dollop of pesto. Drizzle with some good olive oil if desired and even parmesan, if you fancy.
