
A Heartwarming Chickpea + Winter Veg Broth

Ingredients

1 x 660g jar of Queen Chickpeas (1 jar with liquid)

Leeks (1 large / 2 small)

Garlic (2 cloves)

Kale (handful)
-
Cabbage of your choice (handful)

Spicy Chorizo (75g)

Thyme (good sprig)
Directions
Starting in a cold pan, cook off the diced chorizo to release its oils + it starts to take on some colour.
Add the sliced leeks + garlic + season (baring in mind chorizo is already seasoned). Gently sweat for 3-5 mins or until they are tender but not melting.
Add your thyme + give a good mix around.
Drain your chickpeas, reserving the liquid which will form the stock, + add to the pan. On a medium heat, fry off for a minute or so until the chickpeas take on some flavours from the chorizo + leeks.
Pick out the tough stems from your kale + finely slice your cabbage + add to the pan. Give everything in the pan a good mix (any winter leaves here are good)
Once everything is combined, add back in your chickpea liquid. If there isn't enough liquid you can add some vegetable stock to bulk it out.
Bring your broth up to a gentle heat + cook until the kale + cabbage is tender.
Season with salt + pepper + serve!
